Lotus seeds are small white/off-white cotton like seeds that you will usually find the dry fruit section of any departmental store. They are seed pods that you find in the lotus and each pod contain exactly 20 seeds in it. The fresh ones though are green in colour but once they dried they turn to light yellow or white.

You can even eat them raw and it is extensively used as paste to thicken up the gravy. A special kind of soup is also prepared with lotus seed and red bean paste in Asian countries.
